Peel, wash, and shred your potatoes and onion and put in a large bowl. Add your seasonings and eggs. Set up a plate or flat bowl with your flour.
Using your hands, mix the potato mixture together. Grab small handfuls of potato mixture and squeeze most of the liquid out. Form the potato cakes into patties and coat each patty's side with flour and set aside.
Heat your oil in a large pan on medium high heat and cook in pan with vegetable oil. Place pancakes in pan and press lightly on top with spatula to flatten if needed.
Cook for about 3-5 minutes on each side. Place on paper towels when cooked to remove some of the oil.
