Well the husband didn’t know if he was going to like this meatloaf. Unfortunately, I sometimes have to plop down his dinner in front of him without telling him whats in it. I mean meatloaf that isn’t made of ground beef or pork…how bizarre, right? But he ate it and actually loved it. That’s what I have to do with the husband and the most times the kiddos. If I tell them all the ingredients in a meal, they may have a chance to protest. Not even getting a chance to enjoy the dinner without even trying it. Or they will have already got it in their heads that they hate it and then there is no turning back.
But I can say that this meatloaf is a family winner and is baked over and over again in my kitchen. The entire family’s plates were wiped clean when I make this for dinner. The bacon and ranch combination is a sure winner along side the ground chicken base of meatloaf. It is delicious and a family favorite.

I have calculated that my entree of bacon ranch chicken meatloaf cost me roughly $7.00 to make for the family. The majority of the price is made up from the meat; bacon and ground chicken. While some homesteads provide their own meats, we unfortunately do not. We are subject to purchase our meats that the grocery store and so there isn’t much for me to be able to reduce the cost of this entree.
I do however make my own breadcrumbs from leftover breads, ranch dressing that can save a few cents, raise our own eggs, and grow garlic and onions. It save a little for this recipe. And every penny counts in this day and age.
