Chipotle Apple Pulled Pork with Apple Butter Slaw Recipe
I absolutely love coming up with new and unique meals that you can’t find anywhere else. Just recently I made a vinegar based Cole slaw which the family enjoyed immensely so I thought about coming up with another flavor of cole slaw. I had half a head of cabbage leftover so why not, right?
This cole slaw is easy to make and uses my homemade canned apple butter recipe but you can easily substitute it for store bought. When I made this recipe my apple butter was a bit on the runny side so if yours is not mixing well with the cabbage then add a tablespoon or two of water. But no worries if you don’t add water, the cabbage and apples will release liquid. Serving this cole slaw on top of the sandwich gives the pulled pork a crunch and a different flavor dimension. This is an awesome sweet and tangy cole slaw and can work for just a summertime BBQ side dish too.
The chipotle pulled pork is not like my other slow cooker pulled pork meat. This is not too spicy but you can definitely add more minced chipotle peppers if you like. I loved slow cooking this pork tenderloin with a half a bottle of Angry Orchard Hard Apple Cider. But if you don’t like alcohol then you can simply add the same amount of your favorite apple cider.
